Muffins with egg & turkey (2/3/4)

Ingredients (2 servings):

  • 6 eggs

  • 1 spring onion, finely chopped, green part only

  • 2 slices of turkey

  • 2 tbsp grated parmesan cheese

  • 1 tbsp basil pesto (optional)

  • Salt – pepper


  1. Preheat the oven to 200°C.
  2. Lightly oil 6 muffin baking tins.
  3. Finely chop the onion and turkey and place equal amounts of turkey and onion in the bottom of the muffin tins.
  4. Beat the eggs together with the salt, pepper and basil pesto. Add the cheese and stir. Pour the mixture into the muffin tins.
  5. Bake for 15-20 minutes.
