Mushroom fricassee

Ingredients (4 servings):

  • 1 kg fresh oyster mushrooms

  • 2 heads of lettuce

  • 2 spring onions, finely chopped

  • 1 onion, finely chopped

  • 2 cloves of garlic, finely chopped

  • ½ bunch of dill

  • Juice of 1 lemon

  • 1 egg

  • 1 tbsp olive oil

  • Salt – pepper


Clean the mushrooms, slice them and leave them in a strainer to drain.

Wash and cut the lettuce into large pieces.

In a pot, add the olive oil and sauté the onions and garlic until golden.

Then add the mushrooms and celery and continue sautéing.

Pour 1 glass of water, add salt and pepper and boil for 10 minutes.

Then add the lettuce to the pot and continue cooking for 10-15 minutes.

In a small bowl, beat the lemon with the egg.

Add a little juice from the pot to the bowl and then pour the bowl mixture back into the pot.

Add the finely chopped dill, stir and cook for 2-3 more minutes.
